  • Sodium (Na): 2 ppm

We have been working with Alejandro and Horacio Solis since 2014 and this is the best lot I have tasted from them. They have several farms, but their crown jewel is called “El Coyote”. When I visit Costa Rica, I taste about 20-25 coffees from the Solis harvest and pick my favourites to bring to Calgary. I usually build a single lot - which has a super crowd pleasing profile - with lots of nougat, vanilla, chocolate and dried fruit notes. But this lot really impressed me with many of those notes, but a bit more fruit notes and juiciness. I separated it from the main lot so that we can share with you some of the variety of cup profiles Alejandro and Horacio are able to achieve.
