In the summer of 2017, we moved our entire roasting facility from a warehouse in East Inglewood to the historic Simmons building. The purpose of this move was to put our operation right in front of the public, in order to draw our guests into the process and get them excited about our innovative approach to coffee. The centrepiece of our new operation is our custom-built 45kg coffee roaster. It took Phil almost 3 years to design and build this vintage machine from the old body of a German-made 1961 Probat G45. Phil used the original drum and cooling tray but, leveraging his Engineering background, he redesigned and built the combustion system (burner), electrical system (motors, etc.), venting system, and the control electronics. He also wrote the control software.
