Here’s How to Choose Your Next Favourite Coffee

Here’s How to Choose Your Next Favourite Coffee

With so many options, finding a coffee you love isn't always easy.

Whether you're looking for something familiar or chasing your next favourite, our new system is designed to make it easier. We're now organizing our coffee bags into two series: Core and Spotlight.

Core

You can find these coffees in the coloured bags, with the motif of hillsides on the front. We designed the Core lineup to take the guesswork out of choosing coffee. You can hone in on a flavour spectrum that you love, and trust the name to guide your next purchase.

This  series is all about flavour profiles. Each coffee in this lineup — names like Smooth Operator, Sugar Heist, Lilac Dream, and Honey Haze — is crafted to match a specific style of flavour experience.  Once you find a profile you love, you can trust it.

Even though the specific coffees behind each Core name will change throughout the year, the flavour experience will stay true to what you prefer and expect. For example, Honey Haze Espresso will always deliver a layered, honeyed sweetness with gentle fruit notes, even if the farm or lot behind it rotates. Speaking of the farms and lots — we remain committed to working  with our small coffee producers through direct trade relationships, sourcing single-origin coffees that highlight their work. You can see this information right on the bag, connecting you more closely to the coffees you love and the people behind them.

You'll find the Core coffees separated by brew method — filter, espresso, (and decaf) — to make it even easier to match your brewing setup.

Spotlight

In our white bags, Spotlight is where we shine a light on coffees that deserve a little extra attention. They come from producing partners that we have longstanding relationships with, and stand out for different reasons — whether that's a rare varietal, a new experimental processing method, or simply a stellar harvest that deserves extra attention.  If you’re thinking, “Sounds amazing, but probably pricey…” — not to worry. Plenty of Spotlight coffees are priced similarly to our Core offerings.

Each Spotlight coffee carries the name of the producer who grew it, alongside key details about the coffee’s journey. These are typically short-run offerings that let us share the coffees we’re most excited about — the ones we can’t help but talk about. These coffees aren't designed to match a specific flavour profile — they're meant to show off the full range of what coffee can be. They do, however, lean toward the brighter, fruitier, and juicier side of the coffee experience.

Expect variety, expect surprises, and expect to fall in love. These coffees are omniroasts that have been optimized for filter brewing methods, but a savvy barista will definitely be able to pull tasty shots with them.

"How do I choose?"

  • If you want a consistent, dependable flavour experience, stick with the Core series of bags and find the profile that fits your tastes.
  • If you want to explore new origins, rare varieties, and innovative processing methods, dive into the Spotlight series.
  • If you want to experience the best that our producers have to offer, check out our Uncommon Collection tins. We’re not exaggerating when we say that they’ll be some of the best coffees you’ll ever have.

As always, If you’re unsure where to start, we’re  happy to help point you in the right direction.
