Instant Coffee - Jungle Berry
As a great counterpoint to our Smooth Operator, we're excited to offer Jungle Berry as an instant coffee. This specific Jungle Berry is from Juan Jimenez in Palestina, Colombia.
This is again a collab with Hasty Coffee (@hastycoffeecompany). Hasty Coffee was founded by brother duo Ben & Josh McGaghey and, as it turns out, Ben is a P&S alumnus.
The reason we love Hasty is not just that they consistently top other instant makers in blind head-to-heads, but that they are ever committed to evolving their product quality, a bit like us 😄. This batch is revision 5 of their process, and it just keeps getting better.
Each box comes with 6 packets of coffee. We hope you love it!
IMPORTANT: For the best cup, we don't recommend using boiling water. Sounds crazy, but trust us. We suggest 175°F / 80°C for ideal results, but most temperatures work as long as it’s well below boiling. Just add hot-ish water and stir. Anywhere, any time.
The coffee in Jungle Berry right now comes from a longtime coffee producer from Colombia: Juan Jimenez. He grows a lovely Pink Bourbon in one of the most beautiful growing regions in Colombia. You can read more about Juan below.

JUAN KEEPS ON IMPRESSING WITH HIS PINK BOURBON
This is another great lot from Juan Jimenez. It’s a great expression of the Pink Bourbon variety. Juicy, lively and super clean. We have been working with Juan since 2020 and we regularly buy his Pink Bourbon, Red Bourbon, Colombia and Caturra. He’s a gem and an exemplar of what a quality focused producer can accomplish in Colombia.
It’s a Pink Bourbon that has undergone a double fermentation: 48 hour anaerobic in cherry form; then it was depulped and fermented in traditional barrels in mucilage for another 40 hours. Then the coffee was fully washed. The formal name for this processing is Double or Two-Stage Fermentation. The result is a vibrant, expressive coffee that reminds me of everything that’s good in this world.
Juan Jimenez is a second-generation coffee farmer who has been running his own show since 1980. His farm, Finca Buena Vista, is in one of my favourite regions of Colombia. The region is called Palestina and it’s in the southern end of the department (Colombia has departments, not provinces) of Huila. In fact, he is neighbours with our long-time friend and producer, Jose Martinez. He grows Caturra, Pink Bourbon, Red Bourbon and Typica.
I’ve always been a big fan of coffees from Palestina. Since the advent of Juan Valdez and the Colombian marketing machine in the 1980’s, most of Colombia’s coffee producers have replanted their farms with highly productive and hearty coffee varieties. They grow these varieties in high density, removing nearly all the shade from their farms, and they use agrochemicals more frequently. In contrast, the small region of Palestina, situated in the southern part of the department of Huila, still maintains some of the coffee varieties and shade trees that gave Colombia its original coffee fame.
One of the cool aspects of Juan’s production is his fermentation. Due to the cooler conditions in his farm, he needs to ferment 36-48 hours, and, in my experience, this almost always leads to better flavours in the cup. Juan is lucky to be married to Leydi, who is his amazing right hand at the farm. When I met Leydi, I could instantly tell she was in charge of all the details – she is meticulous. Leydi and Juan care deeply about doing things ‘right’, so things like cleanliness and hygiene and punctuality in processing are done at a very high level. This deep respect for attention to detail is rare!
