Project III

Release 2 · Ratibor Hartmann

Phil & Sebastian | Proud Mary | MAME

Introducing the second edition of Project III: A celebration of coffee producers, roasters, and the craft that connects them.

Behind every remarkable coffee is a producer whose knowledge, curiosity, and dedication have shaped it over years of work. Equally important are the roasters who bring those coffees to life, each with their own philosophy and understanding of how to reveal what’s possible in the cup. It’s a relationship built on a shared pursuit of quality, and one that continues to fascinate us.

Project III celebrates both sides of that relationship. Three world-class roasters, each selecting a distinct coffee from the same producer and roasting it to reflect their individual approach. One producer, three perspectives, offering a rare opportunity to explore the depth and diversity of exceptional coffee, and the many decisions that shape it along the way.

For this second edition, we turn our attention to Panama and the extraordinary Geishas of Ratibor Hartmann. Phil & Sebastian (Calgary), Proud Mary (Melbourne, Portland, Austin), and MAME (Zurich) have each selected a distinct Geisha lot from Ratibor, roasting it to reflect their individual philosophies and styles.

MAME

MAME is a specialty coffee company founded in Zurich in 2016 by World Champion Emi Fukahori and Mathieu Theis, built around a simple idea: coffee should make you curious.

From our cafés to our roastery, we search for coffees that surprise us, coffees with remarkable character, clarity and stories worth sharing. We work closely with producers around the world, building relationships that allow us to learn, experiment and continually push what coffee can become.

Competition has always been part of MAME’s DNA. It gives us a space to question what we know, explore new ideas and then bring those discoveries back to the people who visit us every day.

Ultimately, exceptional coffee should never feel complicated. Our role is to understand the complexity behind it, so that all you have to do is enjoy the cup.

This the price paid directly to the farmer who actually grows the coffee. If it's an individual farmer who does all of the processing themselves, it will be per lb of green coffee. If the farmer only grows the coffee and sells cherry it will be / kg cherry. This is a very important price that's often obscured and may or may not be related to the export price.
